Liuzhou "Luosifen" is also known as Liuzhou rice noodles with river snails.

Summer is the on-season for processing sweet bamboo shoots. I made some pickled bamboo shoots. River snails and pork bones are stewed for hours to make a delicious stock. 

A handful of rice noodles, a few slices of vegetables, pickled bamboo shoots and green beans, chunks of "wood ear" fungus and dried daikon radish. Just before serving, sprinkle it up with pan-fried peanuts and tofu skin, and add a spoonful of chili oil. Sour, pungent, savory, mouthwatering, and steaming - this is how a bowl of Liuzhou "Luosifen", the legendary cuisine that has been listed as one of the intangible cultural heritages of China, is made.

螺螄粉是廣西柳州的風味小吃,由柳州特有的米粉,加上酸筍,木耳,花生,油炸腐竹,黃花菜,鮮嫩青菜等配料及適度的酸辣味和煮螺螄的湯水調合成型,具有酸,辣,鮮,爽,燙的風味及酸筍的特殊氣味。 螺螄粉最大的特色為此湯底帶有辣和腥的味道。螺螄湯以柳州青螺為原料,加上豬筒骨再配以多種香料(有些會加入中藥)熬製成湯。由於各家所賣螺螄粉的湯底不同,因此不同店家的螺螄粉味道也略有不同。精心熬製的螺螄湯具有清而它的主料是乾米粉,和米粉,米線不同。通常是用由柳州特有的軟滑爽口的米粉(幹切粉)。 優質的干切粉要用陳米製造,在清水中浸泡軟化之後再煮。

2014年,速食袋裝螺螄粉問世,螺螄粉實現工業化生產,柳州市也先後於2015年和2016年建立螺螄粉協會和螺螄粉產業園,此後螺螄粉成為中國互聯網爆紅的小吃,袋裝螺螄粉的銷量大增,2019年突破60億,日均銷量超過170萬袋,柳州當地豆角,竹筍等原材料的需求量也因此增長。2019年冠狀病毒病中國大陸疫情爆發後,民眾居家抗疫放置袋裝螺螄粉銷量暴漲,2020年2月中下旬因原材料緊張導致螺螄粉一度缺貨,“螺螄粉還不發貨”也因此一度成為當時的微博熱搜話題。Wikipedia
